FOSSALTO is a town in Molise that stands on a hill at 511 m a.s.l. surrounded by green hills that seem to hide and preserve it. It has 1161 inhabitants and the new nucleus also extends into the valley. It is a town that retains its feudal character, perched on the hill and surrounded by woods and its many districts. It preserves the original architectural structure intact with the stone portals of exquisite workmanship still intact by local master craftsmen. The ancient village developed around the baronial palace and the artistic churches "Parrocchiale di S. Maria Assunta" and "Sant'Antonio di Padova". Especially in the warmer months, starting from March, there are various festivals: the "Scurpelle" festival, the "Pagliara Maje Maje" and various fairs. On May 1, spring is honored with the typical festival of the "Pagliara Maje Maje" which is a riot of the season that covers the countryside with its colours. Immediately after the rural re-enactment it is customary to offer all the guests the "lessima", a soup of five cereals: chickpeas, beans, cicerchia, wheat and corn accompanied by fresh broad beans, pecorino cheese and good homemade bread. It has a mild, dry and pleasant climate of eternal spring. In the village we find: doctor, barber, pharmacy, appliance store, Postamat, bar, ice cream shop, pizzeria, butcher, mini market, and weekly market on Wednesdays.
