GUILMI is a village in the Province of Chieti in the Abruzzo region of Italy, with 404 inhabitants, located at 647 m above sea level in a splendid naturalistic setting near the Sinello River Valley. The patron of Guilmi is Saint Nicholas of Bari, celebrated on May 4rth and 5th with a procession in traditional costumes where the women carry on their heads the “conca”, that is a brass vase filled with traditional foods and sweets, which is sold in order to make offering to the church. Known mainly for the production of cured meats and for the tasty ventricina, a raw pork sausage, of large caliber with coarse grain, with an exceptional taste, aged for at least 90 days. Its extraordinary goodness is the result of a careful and precise choice of raw materials, using fresh lean and fatty meat of heavy pork (heavy pork (about 150 kilos), such as shoulder, neck, loin, thigh, bacon and bacon. This specialty is perfect to be enjoyed with excellent cooked wine from local wineries. Its origins are very ancient and date back to the 11th century, when the town was under the dominion of the Monastery of S. Stefano da Trasmondo. The village has a clear medieval imprint and is characterized by alleys, stairways and walls, dominated by the Mother Church adjacent to the ancient noble palace of the Lizzi. In the village there is bakery, grocery/food shop, bar, restaurant, post office.
